Inflight Dining on the Columbine II

When I first found this menu in the Mary Jane McCaffree Papers at the Eisenhower Presidential Library I was curious. For reasons of security, meals aboard the Columbine II, (the Military Air Transport Service (MATS) aircraft used by President Eisenhower) were prepared with fresh supplies were brought from the White House kitchen. For at least four flights in 1953 and 1954 the food was instead prepared in a United Airlines kitchen, undoubtedly under very strict supervision and brought about the Columbine.

 While I'd love to dig deeper into the exact details of these flights, the research room at the Eisenhower Library is closed at this time due to Covid-19. For anyone curious about food service aboard the Columbine there is a short oral history with Jack Woodward. Woodward served as steward and valet aboard the Columbine for Dwight D. Eisenhower was Supreme Allied Commander of NATO and later when he was President.
