 Continuing with Joan Kelly's recipes in her copy of the Louise Parrett cookbook, we've reached the dessert sections.

PUDDINGS AND PASTRY

Home Made Pudding, Aunt Clara
1 tablesp. butter, cupful sugar
2 eggs, nutmeg, cloves, cin. teasp.
in all, 2 tablesp. sour milk, 1 1/2 cup
raisins, 2 tablesp. [syrup?], little soda,
chicken with bread crumbs. Season
with vanilla or lemon. Steam in
double boiler till it looks set.

    Carrot Pudding. Mrs. Pradick
1/2 cup butter
1 cup grated carrots. 1 cup grated potatoes
1 teaspoon soda in potatoes
1 cup sugar, 1 cup flour. [Still?] all
together. 1/2 cup rasisins, 1/2 cup currants
1 teasp. cloves, 1/2 each cinnamon & nutmeg. 3 hours.


    Prune Pudding. Mrs. Campbell
Stew until tender, 1/2 lb. prunes in
qt. of water, add 1/2 cup sugar & let
stand over night. Remove pits when [unintelligible]
1 cup suet chopped fine, 1 teasp. each of
cinnamon, cloves, nutmeg, a little
salt. Use prune juice to thin [mix?]
[time]. Bake 1/2 hr. Serve with butter
sauce or whipped cream.

    Apple Pudding
Six apples, peeled, sliced & cook
until tender, juice of two lemons
& sugar to taste, whites of two eggs
stiff, & cracker crumbs, butter,
nutmeg & cinnamon, bake

    Peach Batter Pudding
6 tablespoons condensed milk
1 2/3 cups water, 1 qt. ripe peaches
1 1/2 cups flour, 4 eggs
3 tablespoons sugar, pinch salt.
Butter a two qr. dish, spread on the
bottom peaches, halved with stone side
up. Beat eggs light, add items to the
milk diluted with water, salt & sugar.
Pour the mixture a little at a time on the

    Graham Pudding. Nettie
1 egg, 1/4 cup butter, 1/2 cup molasses
1/2 cup milk, 1 1/2 cup graham flour,
1/2  “   raisins, 1/2 cup currants
1 teasp. soda, pinch salt, spice to
taste, steam 2 1/2 hrs.

    Apple Roll.
4 med. sized apples. 1 1/2 cups sugar,
2 cups water, 1 tablesp. butter.
Peel & chop fine, put sugar & water in
pan, 2 in. deep, cook five minutes over
slow fire. Roll out biscuit dough
1/4 in. thick. Spread with finely chopped
apples, roll & cut off pieces 1 1/2 in. thick
Place cut side down in pan of hot
syrup & dot with butter & sprinkle in the
cinnamon & sugar. Place in hot oven &
cook about 25 min.

    Lemon Pie
4 tablesp. flour, 2 tbsp. corn starch, 1/2 cup water
3/4 cups sugar, 1 cup hot water, cook, then add
4 tablesp. lemon juice & 1 teasp lemon rind. [unintelligible]
yolks of 3 eggs, slightly cool, & cover with
Meringue - 3 egg whites beaten stiff with 6 tbsp sugar

CUSTARDS, JELLIES and ICES

Raspberry Cream
3 boxes berries, put
through fine strainer,
3/4 cups sugar, 1 pint cream.
Put sugar in juice then
cream, do not stir.
